Hoy he leído una receta de pechuga de pollo a baja temperatura y se me han quedado grabadas 2 cifras: 65 grados y 30 minutos. He comprado 3 medias pechugas para usar distintos aderezos y como eran grandes las he dejado 32 minutos y han quedado perfectas. Después las marqué en la plancha.
Una con toques indios, otra árabes y otra mediterráneos (para la niña).
Las pechugas tenían los siguientes aderezos:
Pollo árabe:
Ras el hanut
Harissa
7 especias libanesas
Sal de lima
Baharat
Orejones y ciruelas.
Pollo hindú:
Curry mild
Curry hot
Curry vadouvan
Jengibre caramelizado
Sal
Galanga
Asafetida
Pollo mediterraneo:
Orégano
Ajo
Limón
Sal
La relación tiempo – temperatura ha sido perfecta y tanto la textura de la carne como el sabor han sido increíbles. Repetible 100%.

Today I have read a low temp sousvide chicken breast recipe and I have remembered 2 numbers: 65 degrees and 30 minutes. I have bought 3 halves to season with different ingredients and as they were quite thick I have left them 32 minutes and they were perfect. After that, I roasted it a minute.
One with indian touches, other with arab and the last Mediterranean (for my little daughter).
The breasts had the following seasonings:
Arab chicken:
Ras el hanut, Harissa, 7 lebanese spices, Lime salt, Baharat and Dried plums and apricots.
Indian chicken:
Mild Curry, Hot Curry, Vadouvan Curry, Caramelised ginger, Salt, Galangal and Asafoetida.
Mediterranean chicken
Oregano, Garlic, Lemon, Salt
The time-temp relation has been perfect and both taste and texture of the meat have been incredible. Repeatable 100%.
